PORK MARINADE
1/4 cup of vermouth
Harissa paste, 1 tbsp; smoked paprika juice, 1 tsp 1/2 lime
1/4 deseeded and coarsely chopped chili
a little handful of chopped coriander, salt, and pepper
2 chicken breasts that have been cut into tenderloins
GUACAMOLE
Avocado one
Tabasco Juice in two little sprays 1/2 lime
1/4 deseeded and coarsely chopped chili
a small handful of finely chopped coriander
Pepper and salt
OTHER
Spray with olive oil
Slimmer wraps
Crisp lettuce
Reduced-fat sour cream
chopped cilantro
In a flat dish large enough to enable all the chicken pieces to touch the base, combine all the marinade ingredients for the chicken. When everything is fully blended, throw the chicken pieces in the marinade, coating them evenly, and then chill for at least an hour (turning midway).
Make the guacamole in the meantime by mixing all the ingredients together in a basin. While the chicken continues to marinade, place in the refrigerator. Put happy wrap over the guacamole and press down to remove air to preserve the guacamole green.
Take the chicken out of the fridge, cook it in batches in a sizable, heavy skillet with a little coating of olive oil (being careful not to crowd the pan), and then leave it aside.
It tastes excellent with a cool Corona, but that isn't exactly a healthy recommendation, is it? Spread guacamole over the wraps, top with lettuce, add chicken pieces, some light sour cream, sprinkle coriander, season with salt and pepper, and then wrap them up.
